This is a recipe that I got from the Lion House cookbook and modified it a little. It is Vinnie's favorite chili recipe.
20oz ground turkey
1 green bell pepper, chopped
1 red bell pepper, chopped
1 medium yellow onion, chopped
1 tsp crushed red pepper flakes
1 1/2 TBSP chili powder
1 TBSP garlic, minced
1 tsp cumin
1 tsp black pepper
1 1/2 tsp kosher salt
1/2 tsp cayenne pepper
2 (14.5oz) cans petite diced tomatoes
1 (7oz) can diced green chilies
3 (14.5oz) cans kidney beans, drained and rinsed
2 C tomato soup
1 C tomato juice
3/4 C brown sugar
*In a large pot, brown the ground turkey. When the turkey is almost completely browned add peppers, onion, garlic and spices. Mix thoroughly and let cook for a few minutes. Add remaining ingredients and simmer 45 minutes, stirring occasionally.

Black Bean Soup
This recipe is SO easy. I think this is one of my most requested recipes. It's really good and good for you!
1/2 medium yellow onion, chopped
1/4-1/2 bunch of fresh cilantro, chopped
1 (14.5oz) can chicken broth
2 (14.5oz) cans black beans, drained and rinsed
1 (14.5oz) can petite diced tomatoes, undrained
1 (14.5oz) can corn, drained
juice of 1 lime
garlic salt and pepper to taste
cheese
avocado
*Combine everything in a pot and simmer about 20 minutes. You'll know it's ready once the cilantro turns a dark green and the onions are transparent. Easy, right?
